Nicholas would be "Νικόλαος" (NeekOlaos) or "Νικόλας" (NeekOlas)


Joseph, would be "Ιωσήφ" (eeosEEf),if it was your first name, but since it's your last name, I guess it shouldn't be translated, just written in Greek letters: "Τζόσεφ"..
